Kale & Macadamia Oil Pesto

Small bunch of kale (about 2 cups) – stems removed and roughly chopped
1 cup rocket leaves (optional)
¼ cup pine nuts (or substitute with any nuts you like – try it with macadamias)
¼ cup macadamia nut oil
Juice of 1 Lemon
1 clove garlic
50g parmesan cheese* (or vegetarian alternative)
1tsp salt
Pepper to taste
*Leave out the cheese to make it vegan

Bring a small pot of water to the boil
Blanch the kale in the boiling water for about 30 seconds to soften it
Blend the kale together with the rest of the ingredients in a food processor
For a smoother pesto, add extra macadamia nut oil
Adjust seasoning as necessary
